Fresh Vegetable Spring Rolls with Dipping Sauce

            1 head of butter lettuce


            1 cup shredded carrots


            1 avocado


            1 cucumber


            2 cups bean sprouts


            ½ cup chopped cilantro


            Salt and Pepper


            1 TBSP lemon juice


Rice Paper Spring Roll Wrappers




Combine all vegetables in a bowl and season with salt and pepper.


Submerge the spring roll wrapper into a dish of water.  Lay onto a clean towel (this makes it easier so it does not stick)


Put a strip of filling onto one side of the wrapper.  Fold over the ends and roll tightly like you would a burrito.


Soy Dipping Sauce

            ½ cup soy sauce

            ¼ cup rice vinegar

            2 tablespoon sesame oil

            Pinch of sugar

            Combine all ingredients in a small bowl.
