Pao de Queijo

Brazilian Cheesey Bread

 

Ingredients:

1 egg

1/3 cup olive oil

2/3 cup milk

1 1/2 cup tapioca flour

1/4 cup grated cheddar cheese

¼ cup crumbled cotija cheese

1 teaspoon salt

 

Instructions:

Preheat oven to 400o.

Oil a mini muffin pan. (24 cup)

Shred cheese. Combine all ingredients into a blender and pulse until smooth. Pour batter into prepared muffin pan about ¾ full.  Bake 15-20 minutes until puffy and golden.

Let cool a few minutes before removing from pan.
