Recipe: Energy Bites


This one bowl recipe has been a hit with the kids in their cooking groups. Try making this easy snack at home!

Ingredients:

2 cups instant or quick oats

3/4 cup toasted quinoa

2/3 cup unsweetened coconut

1/2 cup ground flax seeds

3/4 cup peanut butter

1/2 cup dried cranberries

1/3 cup mini chocolate chips

1/3 cup honey

1 teaspoon vanilla

Directions:

Cover a baking sheet with wax paper, set aside

Heat a medium skillet. Toast quinoa for 3-5 minutes or until starts to brown and pop, stirring occasionally. Remove quinoa and let cool.

In a large bowl mix all the ingredients together. Keep stirring until all the sticky peanut butter and honey combine thoroughly with all the other ingredients.

Firmly, press spoonfuls of the dough into small silicone molds.

Refrigerate 30 minutes and then pop them out of the molds.

Store in airtight container until ready to serve.

Note: If you do not have small silicone molds, you can roll them into balls and and set on wax paper.
