Ingredients: 1 cup milk 2 tablespoons distilled white vinegar 2 cups all-purpose flour 1 tablespoon white sugar 1/2 teaspoon baking soda 1/2 teaspoon salt Directions: Stir the milk and vinegar together, and set aside until curdled, about 10 minutes. Ingredients: 4 1⁄2 cups whole wheat flour (preferably stone ground) 4 1⁄2 cups all-purpose flour ¼ cup wheat germ 2 tablespoons molasses 2 teaspoons salt 2 teaspoons baking soda 3 1⁄2 cups buttermilk Instructions: Heat the oven to 450° F. Mix the dry ingredients together in a large bowl. Make a well in the center and add the buttermilk all in one go. Working from the center, mix with your hands. The dough should be soft but not sticky. Turn out half the dough onto a floured board and knead lightly, just enough to shape into a round. Put onto a floured baking sheet. Creamy Asparagus Soup

Ingredients: 2 lbs asparagus, trimmed of woody stem bottoms 1 large yellow onion, chopped (1 1/2 to 2 cups chopped) 3 Tbsp unsalted butter 4 cups chicken stock 1 cup water Leaves of 2 sprigs of fresh thyme 2 Tbsp chopped fresh parsley 1/4 cup heavy cream A squeeze of fresh lemon juice Salt and pepper Directions: Cut tips from the asparagus 1 1/2 inches from top and halve tips lengthwise if thick. Brazilian Cheesey Bread Ingredients: 1 egg 1/3 cup olive oil 2/3 cup milk 1 1/2 cup tapioca flour 1/4 cup grated cheddar cheese ¼ cup crumbled cotija cheese 1 teaspoon salt Instructions: Preheat oven to 400o. Oil a mini muffin pan. (24 cup) Shred cheese. Combine all ingredients into a blender and pulse until smooth. Pour batter into prepared muffin pan about ¾ full.
