Recipe: Quinoa Pudding

Quinoa Pudding Ingredients: 1 cup quinoa, cleaned (6oz) 6 cups water 2 eggs 2egg whites 1 cup whole milk 1 tsp vanilla ¾ cup sugar plus 1 tbsp sugar ⅛ tsp salt ¼ cup slivered or chopped almonds ¼ cup dried currents ¼ tsp cinnamon Directions: Place quinoa in a bowl of water. Begin the cleaning by rubbing the grain together between your hands. Drain and repeat several times. You will know quinoa is clean when the water is no longer milky after rubbing. This step is essential for removing the bitter layer that surrounds the grain. Bring quinoa and 6 cups of water to a boil in a large saucepan. Stomping in the New Year!

Here are some fun pictures of the Red Robin class "stomping out" last year. During the calendar year, each day their morning arrival routine includes a class conversation about what day it is as the corresponding number is hung onto the bulletin board to keep track. At the end of the month they lay them all out and tape them together, roll it all up and save the year in a basket. On the first day back from break, they unroll them all and get to see how long last year was, laying all around the floor of the classroom. With a skip in their step, they parade around "stomping out" the past year and welcoming in the New Year. Happy 2018! #Winter
