Recipe: Energy Bites

This one bowl recipe has been a hit with the kids in their cooking groups. Try making this easy snack at home! Ingredients: 2 cups instant or quick oats 3/4 cup toasted quinoa 2/3 cup unsweetened coconut 1/2 cup ground flax seeds 3/4 cup peanut butter 1/2 cup dried cranberries 1/3 cup mini chocolate chips 1/3 cup honey 1 teaspoon vanilla Directions: Cover a baking sheet with wax paper, set aside Heat a medium skillet. Toast quinoa for 3-5 minutes or until starts to brown and pop, stirring occasionally. Remove quinoa and let cool. In a large bowl mix all the ingredients together. Keep stirring until all the sticky peanut butter and honey combine thoroughly with all the other ingredients. Firm
